Vegan Pumpkin Pie

Ingredients:

  • 16 ounce of pumpkin pure

  • 1 can of full fat coconut milk (only use the thick milk, strain out the water)

  • 1 cup coconut sugar

  • 3 tbsp Arrowroot powder

  • 1/2 tbsp molasses

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/2 tsp ginger

  • 1/4 tsp cloves

  • 1/2 tsp salt

Directions:

  1. Preheat oven to 350 degrees, prepare 9 inch pie crust in pie plate (I used my Vegan Pie Crust)

  2. Blend all ingredients together until a smooth consistency.

  3. Pour over your your favorite 9 inch pie crust.

  4. Bake at 350 degrees for 1 hour.

  5. Cool completely before serving, best served the next day. Enjoy with your favorite toppings!
