Peanut Butter Balls

THIS right here is one of my all-time favorite Christmas candy/treats - I have two ways of making them:


  1. Straight up healthy - no inflammatory ingredients and if you use Xylitol, no sugar either!

  2. Gluten-free + Dairy-free BUT a more beginner level treat, perfect for bringing to your family or friend's holiday party and they will have no idea they are a healthy swap!

Today I am going to share my STRAIGHT UP HEALTHY OPTION:


Ingredients:


Peanut butter dough:

  • 2 cups of unsweetened peanut butter (sub one cup chunky if you like some crunch!)

  • 2 cups powdered xylitol (less healthy or (low fodmap option) options use powdered sugar or coconut sugar)

  • 1 tsp cinnamon

  • 1/2 cup almond flour

  • 1/2 cup cassava flour

  • 1/4 cup coconut oil (can use ghee or butter too)

Chocolate coating:

  • 1-2 cups of chocolate chips (Lily's for no sugar and Enjoy Life for full sugar) melted

  • 1/4 tsp coconut oil as needed to smooth the consistency

Directions:

  1. Mix all peanut butter dough ingredients together in standing mixer

  2. Refrigerate dough mixture for 2 hours

  3. Prepare large baking sheet covered with parchment paper

  4. Roll cold dough into 1 inch ball

  5. Roll in your favorite melted chocolate + coconut oil

  6. Place on a large parchment paper lined pan in fridge to cool and "set"

  7. Store in air tight container in the fridge or if you live in Wisconsin like me: OUTSIDE!
