Bacon Wrapped Broccoli and Goat Cheese

Ingredients:

  • 4 cups of broccoli

  • 10 oz softened goat cheese (or vegan cream cheese alternative for Low Fodmap)

  • 1 tbsp Italian seasoning

  • 1 tsp sea salt

  • 8 slices of pork bacon (2 slices per serving)

  • 8 slices of turkey bacon (2 slices per serving)

Directions:

  1. Preheat oven to 375 degrees F.

  2. In a medium sauce pan, steam broccoli for 2-5 minutes or until color begins to change to a bright green - not fully cooked. Strain and transfer to a large mixing bowl.

  3. Add softened goat cheese, Italian seasoning and salt to the steamed broccoli and stir until well combined.

  4. On a large baking sheet lay out two slices of turkey bacon next to each other (slightly overlapping one another) add one slice of pork bacon on opposite sides making it four slices total. Scoop one cup of the broccoli and cheese mixture and place it in the center of the four strips of bacon. Fold the ends of the bacon slices up over the broccoli to form a "wrap". Repeat this step three more times.

  5. Bake for 30 minutes. For crispy bacon, broil for an additional 3 minutes.

  6. Enjoy!
