Chicken Bacon Ranch Casserole

Ingredients:

  • 2-3 large boneless chicken breasts

  • 8 strips of bacon

  • 3 cloves of minced garlic (if you want, sometimes we don't use it)

  • 4 cups of steamed broccoli

  • 10.5 oz softened goat cheese or vegan cream cheese (Low Fodmap option)

  • 1/2 cup vegan ranch (I used Primal Kitchen)

  • 8 oz gluten free noodles

Directions:

  1. Cook chicken over stove top, season with sea salt and Italian seasoning if you so desire. Let cool and chop into 1/2 inch squares. Set aside.

  2. Cook bacon on stove top, let cool and chop. Set aside.

  3. In a sauce pan steam broccoli, strain and set aside.

  4. Cook gluten free noodles according to their directions, strain and set aside.

  5. In a large mixing bowl combine chicken, bacon, minced garlic, steamed broccoli, vegan ranch and gluten free noodles. Mix until ranch and goat cheese cover all other ingredients.

  6. Transfer mixture into a 12 by 9 inch pan and bake at 375 degrees for 15 minutes. Broil for an additional 4 minutes or until golden brown.

  7. Enjoy!
