Eggplant Pizza

I LOVE pizza, how about you? This KETO pizza recipe is packed with all of the classic Italian flavors we love without all the guilt. Low-carb, Keto & good for you.

Ingredients:

  • 2 large eggplants

  • 1/3 cup avocado oil for brushing

  • 8 oz tomato sauce

  • 10 oz sausage (or toppings of choice)

  • 8 oz pepperonis (or toppings of choice)

  • 10 oz goat cheese (use hard cheese for Low Fodmap)

  • 1/8 cup oregano

  • 1/8 cup red pepper flakes

Instructions:

  1. Preheat oven to 400* F (200*C)

  2. Slice the eggplants lengthwise, about 1/3-1/2 inchs (1 cm) thick.

  3. Coat with avocado oil on both sides, lightly salt and place on a baking sheet lined with parchment paper (very important) Bake for about 20 minutes or until slightly browned.

  4. Remove eggplant slices from the oven and spread the tomato on top of each slice.

  5. Crumble the goat cheese and sprinkle evenly on each slice, add your pizza toppings of choice and finish by generously sprinkling oregano over each piece.

  6. Place back in oven for about 10 more minutes or until the cheese is beginning to brown.

  7. Take out of oven and sprinkle with red pepper flakes, serve with a green salad dressed in olive oil.
