Bacon Wrapped Chicken and Broccoli

Ingredients:

  • 4 cups of broccoli

  • 10 oz softened goat cheese (or vegan cream cheese alternative for Low Fodmap)

  • 1 tbsp Italian seasoning

  • 1 tsp sea salt

  • 4 raw chicken breasts (cut a pocket in each one)

  • 8 slices of pork bacon (2 slices per serving)


Directions:

  1. Preheat oven to 375 degrees F.

  2. In a medium sauce pan, steam broccoli for 2-5 minutes or until color begins to change to a bright green - not fully cooked. Strain and transfer to a large mixing bowl.

  3. Add softened goat cheese, Italian seasoning and salt to the steamed broccoli and stir until well combined.

  4. On a large baking sheet lay out two slices of bacon next to each other. Place a chicken breast in the middle so that you can wrap chicken with bacon once stuffed.

  5. Scoop one cup of the broccoli and cheese mixture and stuff the chicken breast. Close the chicken breast and fold the ends of the bacon slices up over the broccoli stuffed chicken breast to form a "wrap". Repeat this step three more times.

  6. Bake for 30 minutes. For crispy bacon, broil for an additional 3 minutes.

  7. Enjoy!
